Inspired by the nature that grows around them in Carrapateira, Cato wanted to go back to the origins and control the process, process and not buy processed, from bread to sauces, this is a long way from flour to fresh pasta, from barley to beer.
While wanting to respect the roots and go back, learn how to do it and share this learning, they were also incorporating in their kitchen flavours and techniques brought by volunteers from every corner of the world who went to work in the garden.
